Just In Case You're Not SWEET Enough Already...

I missed last weeks Pretty Much World Famous Writing Workshop with Mama Kat and I am almost positive that's why I was so dishevelled.  So, I shan't allow it to happen again.  Nope.  No. Way.

Assignment:  Share a favorite dessert recipe.

For those of you who know me, you KNOW I don't bake.  I've given it a few tries and have had some marginal successes but the following recipe is one that I make about once a year and it has NEVER FLOPPED!

Ok, so it's really easy and that is likely why it is always a huge success but I also like to think that it is because of the "memories" it holds for me as child...like some mystical childhood pixie helps me out or something like "that".  LOL!

Ever since I was 8 years old my family and I spent Christmas in Florida.  They purchased a mobile home in this totally awesome mobile home park.  (Never, I repeatt NEVER call it a trailer or trailer park unless you want to see my mom go ballistic!)    Anywho, our neighbours were Kathy and Jimmy.  They were two of the nicest "old" people I have ever met.  They treated me like their granddaughter.  Every year I would anxiously await the arrival of "THE COFFEE CAKE".  This Coffee Cake was the most delicious, moist, sweet dessert I had ever had.  And that is saying a lot as I have always preferred anything chocolate.  To hit this point home, if I had to choose ANY dessert in the world as my last to have,  it would be "THE COFFEE CAKE"  (Following very closely behind would be a "Bye-Bye Diet Brownie") .

I want to share with you this bundt pan filled with yummy deliciousness.  I realize now, that this is a popular recipe from some huge "boxed cake" company but it will forever remain Kathy & Jimmy's own recipe of "Sweet Memories" for me.

Devito's Coffee Cake

1 yellow cake mix
1 box instant vanilla pudding
1 c. sour cream
4 whole eggs
1/2 c. cooking oil
1/2 c. milk

Blend cake mix and pudding. Add rest of ingredients. Beat all together for 10 minutes at medium speed with electric mixer.

TOPPING:

3 tsp. cinnamon
1/4 c. brown sugar
1 tbsp. flour
Pecans

Mix together. Pour half of the batter in a greased bundt pan. Sprinkle half of the topping on the batter; cut in and add remaining batter and sprinkle with the remaining topping on cake.

Bake at 350 degrees for 50 minutes or until it passes the clean toothpick test.  Drizzle caramel sauce over top cut slices...OMG!!!   Soooooo DE-licious!
